Lollie Cake
This is a cake that is loved by all New Zealand children old
and young alike.

4 ozs butter
½ tin sweetened condensed milk
1 packet malt biscuits
1 packet fruit Puffs (a hard fruit flavoured marshmallow
type lollie)
Coconut for coating
Warm the butter and condensed milk together until the butter
is soft.
Crush the biscuits to crumbs and add to a bowl.
Chop the lollies and add to the crushed biscuits.
Pour in the butter mix and mix well.
Roll into logs about 2 inches thick and roll in dedicated
coconut.
Place in the fridge to set up a bit and then slice ½ inch
thick and store in a cake tin.
Note: This cake or slice is very sweet and rich. A great
party favourite here in New Zealand for the children.
Variation: If you cannot get the fruit puffs there, then a
good substitute is to add, 1 cup of golden raisins instead. This makes just as
nice a cake and one that I actually prefer to the lollies.
