Tuna Dip or Sandwich Spread

240 gm cream cheese
½ cup homemade mayonnaise
1 cup tuna, flaked
½ cup pitted olives
2 tablespoons fresh lemon juice
Freshly ground black pepper
Salt to season
Mix all the ingredients until well combined. Store in a sealed container and refrigerate until needed. Will keep for 5 days refrigerated. Use as dip for crackers, toasted tortilla chips or toast wedges, or as a filling in sandwiches for a high tea, school lunches or just a snack.

Note: This is very nice with some finely chopped red capsicum, green capsicum, onion and celery added. These vegetables will add colour and crunch.

  1. Most people do not realise that most thick dips will make awesome fillings for sandwiches or bread rolls. I love this one on a freshly baked bread roll with just a little lettuce and a few slices of cucumber and tomato and a sprinkling of extra freshly ground black pepper.

Why don't you experiment with your favourite thick and chunky dip. I am sure that you will surprise your self in a wonderful way.
